Getting a player with this type of role at +140 seems fine. The Eagles are mighty up front, but they prefer to play lighter boxes, so there should be some space for Hunt if the offensive line can win its matchups.

However, Gray is still playing about 50% of the snaps. His role should remain stable against the Eagles, who defend 12 personnel (two tight ends) significantly less effectively than 11. The Chiefs staff will surely be aware of these splits.
While the Eagles have mostly locked up opposing tight ends, that's more a function of their overall defense than any particular skills they possess. They looked vulnerable in the NFC championship, allowing Zach Ertz to run wild for 104 yards on 11 catches.
Gray should still have a role, and he's been a red-zone staple for the Chiefs. The market seems unenthusiastic about him after back-to-back duds, but that means it's time to buy low.
